Ravioli

Ravioli with Ricotta cheese.

Today’s lunch will be a ricotta cheese ravioli with the pasta made from scratch.

Home made Pasta:

The pasta mixture was created with flour, eggs, water and a pinch of salt.
Once mixed you put enough to make a handful then grab some flour to ensure the mixture will not stick to the pasta machine.

You put your handful of mixture into the pasta machine then turn the handle so you will get a flat pasta sheet. If its not quite square or full enough then fold and put through the machine again.

Filling:

In a separate bowl mix together ricotta cheese, eggs, salt, pepper, garlic and parsley.

Method:

Once you have the flat pasta sheets, use a teaspoon to put the filling onto the pasta. Then place another layer of pasta on top of your ricotta filling and cut out your shape to create a circle (or square if you prefer). Then use a fork along the edges of your shape to close it and secure the filling.

Cook in a saucepan of boiling water until cooked.

Then serve with a tomato purée and shaved Parmesan cheese on top.
